Cooking Instructions
Wagyu Beef Burgers - Pan or Barbecue
±170g each, 2 or 6 per pack. Defrost 8 hours. Around 10 minutes to cook.
1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 8 hours. Cook within 48 hours of defrosting. Do not refreeze.
2. Handle them as little as possible
Take them out of the fridge 20 minutes before cooking. Do not reshape or compress them. Wagyu fat is soft and works easily, and a worked patty turns dense.
3. Season the outside only
Salt both faces just before they go in the pan. Salting early draws out moisture and tightens the mince.
4. Get the pan hot
A heavy pan or flat griddle on a high heat for 3 minutes. You need no oil. These render plenty of their own fat within the first minute. On a barbecue, cook them over a flat plate rather than open bars, so the fat is not lost to the coals.
5. Cook without pressing
4 to 5 minutes on the first side. Turn once and give the second side the same. Never press them with a spatula. That single habit squeezes out the fat that you are paying for.
6. Cook them through
Unlike a steak, a burger should be cooked all the way through. Probe the centre and take it to 70°C, holding it there for two minutes. The juices should run clear with no pink in the middle.
7. Add cheese at the end
Lay it on for the final minute and cover the pan to melt it. Toast the buns cut side down in the rendered fat while you are there.
8. Rest
2 to 3 minutes before building the burger. It keeps the bun from going through.
Do not cook from frozen. A frozen patty browns long before the centre is safe, and you end up with a burnt outside and an undercooked middle.
Storage
Delivered frozen
Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 8 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0-4°C and cook within 2 days.
Do not refreeze once thawed.

Born & Raised in Yorkshire
Scurf Dyke Farm sits on the south-eastern edge of the Yorkshire Wolds, a few miles from the North Sea. This is where our British Freedown Hills F1 Wagyu are raised, on lush pasture, then slowly transitioned onto farm-grown grains, cereals, and locally sourced olive pieces. Rolling hills, clean air, and unhurried rearing. Quintessentially British, unmistakably Wagyu.

This review is more about customer support than the product, put an order in for steaks and burgers but only steaks arrived, after a quick call I was told the burgers would be despatched that day.
Less than 24hrs after the call I received the burgers and the steaks made a perfect Saturday dinner
Thank you for sharing your experience, Paul! While we always aim for perfection on the first delivery, I’m glad our team could sort this out for you so quickly. It’s wonderful to hear the burgers arrived in time and that everything came together for a perfect Saturday dinner!
Absolutely delicious !! Exceeded expectations! I don’t live in the UK but will order these again when I stay with my son as his family!
Thank you Varsha for your 5-star review. Looking forward to serving you with our fine products when you are back in the UK.

Repeat customer - excellent quality!! I am from Asia and these cuts are hard to find, this is very good. Would recommend.
Phenomenal, cooked this one whole and put it under a very hot grill to finish off the fat cap amd turned out absolutely amazingly.
Great quality, best for barbecue
all my friends loved it
Very decedent with the amount of fat running through the meat in a very good way. Completey different experience to other pork...
Really excellent cut. Flavour & texture are absolutely worth experiencing. Works perfectly on the BBQ. Will be ordering again regularly.
We use this with the Wagyu Beef and Pork Belly BBQ for the dipping sauce, tastes great. We will buy again.
Yet again fantastic quality of meat, brilliant service, thank you
As someone who's from California (where this cut originated and is very popular) I was astounded to find it here. Exceptional flavour and super tender.
I saw a very simple recipe using the pluma cuts of Iberico pork which I wanted to try.
The meat was not cheap, but you absolutley get what you pay for as it was delicious. I cooked it like steak, giving it a hard sear, then turning it enough to leave it pink in the middle. After five minutes rest, it was like pork I'd never eaten before- so, so tender, and really juicy. The flavour was unlike conventional pork with a rich, nutty flavour.
If you can afford it, buy it.
Ordered the wagyu beef and ox tongue, and the ox tongue was impeccable — beautiful marbling and texture, honestly the best quality I've tried in the UK so far. Will definitely be ordering again.
Absolutely delicious! Will order again soon.
Absolutely delicious! Will order again soon. Just I noticed it is often out of stock. I hope i can be notified when the stock arrives.
Absolutely delicious! Will order again shortly.
Ribeye was great. I also ordered Sirloin which, predictably, I wasn't asked to review given it weighed 3 kg and had 600 grams of unnecessary fat (I mean not counting the strip that one would leave for a normal sirloin). Felt scammed.
Customer service got in touch and offered store credit/refund. They were proactive and fair so I have adjusted my review. I look forward to ordering from them again.
Superb quality, very tasty! Delivered promptly, thank you.
