Mollendo Wagyu Beef Chadolbagi
Wagyu beef chadolbagi, a Korean BBQ delicacy, showcases the exquisite quality of Wagyu with its thinly sliced cuts (2 mm) that grill to perfection. Known for its rich marbling and buttery texture, Wagyu chadolbagi is typically grilled at the table, allowing diners to savour the meat's intense flavour and tender consistency. The name "chadolbagi" translates to "first slice of beef brisket," emphasising the premium quality and tradition behind this dish. Paired with savoury dipping sauces and served with fresh lettuce wraps, Wagyu beef chadolbagi offers a luxurious and interactive dining experience that highlights the best of Japanese beef in Korean cuisine.
How to prepare your chadolbagi
Ingredients:
- 500g Chadolbagi (thinly sliced beef brisket)
- 1 tbsp sesame oil (or neutral cooking oil)
- 1/2 tsp sea salt
- 2 green onions (chopped)
- 1 tbsp soy sauce (optional)
- 1 clove garlic (minced, optional)
- 1/2 tsp toasted sesame seeds (for garnish)
1. Preheat the Pan or Grill
- Heat a grill, cast iron pan, or hot plate to high heat (200 to 220°C).
- Lightly grease with sesame oil or neutral oil.
2. Cook the Chadolbagi
- Lay the thin slices of brisket in a single layer on the hot surface.
- Cook for 15 to 30 seconds per side until browned.
- Since the beef is thin, it will cook very quickly.
3. Season & Serve
- Sprinkle sea salt and chopped green onions over the cooked beef.
- Optionally, drizzle with soy sauce or add garlic for extra flavour.
- Garnish with sesame seeds before serving.
Serving Ideas:
--> Serve over steamed white rice with kimchi.
--> Enjoy with ssamjang (Korean dipping sauce) or soy sauce with vinegar.
--> Wrap in lettuce with garlic and gochujang.

Great on a hot grill or pan, would suggest letting it crisp up a little and have it Korean bbq style - wrapped in lettuce with some kimchi, raw garlic and/or ssamjang.
