Wagyu Beef Harami

British Wagyu Harami, also known as skirt steak, is a prized cut renowned for its rich flavour and distinctive marbling. Raised with the meticulous care that defines British Wagyu, this cut offers an exceptional balance of tenderness and beefy taste. Perfect for grilling or pan-searing, Harami delivers a robust, juicy experience with every bite. Its marbling ensures a melt-in-your-mouth texture, making it a favourite among gourmet chefs and home cooks alike. It is often served in Japan marinated in miso or soy sauce.

How to prepare your harami

Serving Size: 2 to 3 people
Total Time: ~15 minutes

Ingredients
- 500g Wagyu Beef Harami (pre-sliced)
- 1 tbsp soy sauce
- 1 tbsp sake (or mirin)
- 1 tbsp sesame oil
- 1 clove garlic (minced)
- 1 tsp ginger (grated)
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp sesame seeds (optional)
- 1 green onion (chopped, for garnish)

Instructions

1. Marinate the Beef

1. Mix Marinade: In a bowl, combine soy sauce, sake, sesame oil, garlic, ginger, salt, and black pepper.
2. Coat the Beef: Add the pre-sliced Wagyu and gently mix until fully coated. Let it sit for 5 to 10 minutes at room temperature.

2. Preheat the Cooking Surface

3. Use a Hot Pan or Grill: Heat a cast-iron pan or grill over high heat until very hot.
4. No Extra Oil Needed: The Wagyu's natural fat will provide enough oil for cooking.

3. Cook the Wagyu Harami

5. Quick Searing: Spread the beef slices in a single layer and sear for 30 to 45 seconds per side. Flip only once for the best caramelisation.
6. Do Not Overcook: Wagyu is best enjoyed medium-rare (~54 to 57°C internal temp). Cooking too long can dry it out.

4. Rest & Serve

7. Rest for Juiciness: Remove from heat and let the beef rest for 2 minutes.
8. Garnish & Serve: Sprinkle with sesame seeds and chopped green onions. Serve with rice or grilled vegetables.

Nestled in bucolic Yorkshire, the Scurf Dyke Farm is the home to our very own British Freedown Hills F1 Wagyu.
Surrounded by rolling hills, verdant pastures, and quaint villages, this region epitomises the charm of the English countryside.
The farm lies on the south-eastern border of the Yorkshire Wolds with the North Sea a mere few miles to the east. Its lush fields provide most of the herds needs. As the cows are weaned of grass, the farm-grown grains, cereals and maize silage, combined with the locally sourced olive pieces, are introduced to their diet. The end result is an exceptional British beef adorned with remarkable umami undertones and a delicate tenderness.
