What is BMS?
BMS (Beef Marbling Standard) measures the amount of fat marbled through the muscle. The higher the score, the richer and more buttery the steak.
-> BMS 6-7: Richly marbled. Tender, full-flavoured, with a smooth buttery finish.
-> BMS 8-9: Intensely marbled. Deeper richness, melt-in-the-mouth texture, and a long luxurious finish.

Cooking Instructions
Chilean Wagyu Fillet Diced - Fast Sear
±300g. Serves 2. Defrost 8 hours. Under 2 minutes of cooking.
1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 8 hours. Cook within 48 hours of defrosting. Do not refreeze.
2. Do not slow cook this one
This is diced fillet, not stewing beef. There is no connective tissue in it to break down, so a long cook has nothing to work on and simply dries the meat out. It wants high heat and seconds, not hours.
3. Dry the cubes
Tip them onto kitchen paper and pat every side. Do not salt yet. Salt pulls moisture back to the surface and you lose the crust.
4. Get the pan properly hot
A heavy pan or wok on your highest heat for 3 to 4 minutes. Add a neutral oil with a high smoke point. The fillet renders almost nothing of its own, so it needs the fat in the pan from the start.
5. Sear in two batches
Half the cubes, spread in a single layer. 30 seconds untouched for a crust, then 20 to 30 seconds on each remaining side. Around 90 seconds a batch. Crowding the pan is the one mistake you cannot recover.
6. Keep the centres pink
Season with salt and pepper off the heat. Rest 2 minutes and serve straight away.
Three ways to use it. Over rice as a wagyu don, with the pan juices spooned over. On skewers, seared hard and finished with flaked salt. Or through a stroganoff, folded in at the very end rather than simmered in the sauce.
Storage
Delivered frozen
Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 8 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0-4°C and cook within 2 days.
Do not refreeze once thawed.
