Made with free-range chicken (breast and leg meat), and seasoned simply: garlic, thyme, parsley and a lift of lemon. Filled into natural hog casing, the way a sausage is meant to be made.

The leg gives them their succulence, the breast keeps them light, and the lemon carries through the whole thing, fresh, herbal, never heavy. They're three-quarters chicken, so what you taste is chicken.

Leaner than pork and a touch more delicate with it. A sausage for any time of year, grilled in the warmer months, roasted through winter, and at home in the pan whenever the mood takes you.
