It's safer. Rapid freezing halts bacterial growth almost instantly, preserving food safety without relying on preservatives. This is particularly important for delicate, high-fat cuts like Wagyu, where the marbling that makes the meat so prized can also make it more sensitive to temperature fluctuation during transport.

What Chefs Already Know

This isn't a shortcut exclusive to online retailers but standard practice in professional kitchens. Many top chefs freeze meat that they've portioned down from larger fresh cuts, precisely because it allows them to lock in quality and manage stock without waste. A large primal cut is broken down, portioned and frozen in batches, ensuring every steak that reaches the pass is as good as the day it was butchered, whether that's day one or day thirty.

The same principle applies at home. A properly blast-frozen steak, defrosted slowly and correctly, will consistently outperform a "fresh" cut that's spent several days travelling and sitting in a display counter, gradually losing moisture and flavour along the way.

How to Defrost Properly (So You Don't Undo the Good Work)

Freezing preserves quality but only if defrosting is done correctly:

- Best method: Move the steak to the fridge for 12–24 hours before cooking, allowing it to thaw slowly and evenly.
- In a hurry: Submerge the sealed steak in cold water for 1–2 hours.
- Avoid: Defrosting at room temperature or in warm water, which can encourage uneven thawing and bacterial growth.

Once defrosted, pat the steak dry, allow it to come to room temperature for 30–40 minutes and cook as you would any of our fresh cuts.
