Description
Hand-harvested fleur de sel from Madagascar, blended with wild bear's garlic from Bulgaria. By Terre Exotique.
The salt comes from the Ifaty salt flats, a small lagoon on Madagascar's south-west coast. It is gathered by hand by the Vezo people once sun and wind have evaporated the water. The crystals are fine and light, and they dissolve quickly on the plate.
Bear's garlic (Allium ursinum) grows wild along stream banks. It is foraged by hand in spring, during a few short weeks. The leaves are dried, crushed and mixed through the salt. The flavour is garlic, but softer and greener than the bulb, with a sweet, peppery edge.
It is a finishing salt. Add it at the table, where the aroma holds. It suits grilled steak, roast lamb, chicken, eggs and buttered vegetables.
Ingredients
Fleur de sel (Madagascar), bear's garlic (5.6%).

FAQs
What is bear’s garlic?
Bear’s garlic (Allium ursinum) is wild garlic. It grows in damp woodland and along stream banks. The leaves are foraged by hand in Bulgaria, over a few short weeks each spring. It tastes of garlic, but softer and greener than the bulb.
What makes fleur de sel different from regular salt?
Fleur de sel is the thin top layer of crystals that forms on the surface of the salt pans. It is skimmed off by hand. The crystals are finer and more delicate than coarse sea salt, so they suit finishing rather than cooking.
Can I cook with it?
You can, but it works best added at the end. Heat dulls the garlic’s aroma. For seasoning during cooking, use plain salt and keep this tin for the table.
Does it work with Wagyu?
Yes. A light pinch over sliced Wagyu, just before serving, adds garlic without masking the beef. Keep it light, as the beef should lead.

Terre Exotique collaborates directly with hundreds of expert farmers and producers worldwide to source the finest peppers, spices, and salts. The company was founded by Erwann de Kerros, a seasoned traveler from Brittany, who was inspired to explore the world of specialty spices after tasting pepper at the Penja plantation in Cameroon.
Committed to sustainability, Terre Exotique partners with farmers to protect natural habitats and support local communities by ensuring a stable income. The company prioritizes environmentally friendly packaging, using metal tins or glass jars instead of plastic. These containers effectively preserve the flavours and aromas of the spices by shielding them from sunlight, keeping the ingredients fresh for longer.
