Description

Criollos are sausages hugely popular in Argentina which can be grilled or barbecued. This traditional recipe made with natural spices will bring you all the wonderful flavours of Iberico pork.
Coming from Spain, Iberico pork is a type of black pig and yields darker meat than the more common breeds, with a deeper, more pronounced flavour that elevates pork dishes to new dimensions. The great marbling of fat running through the muscles makes this pork uniquely succulent, flavoursome and tender.

Ingredients

Here is a quick and easy guide to preparing your 5 Iberico pork criollo sausages! These sausages are packed with flavour, and after thawing, they'll cook up beautifully using different heat sources. Let's get started!

What you'll need:

- 5 Iberico pork criollo sausages (thawed)
- Olive oil (optional)
- A few sprigs of fresh herbs like rosemary or thyme (optional)
- Fresh lemon wedges for serving

Step-by-Step Preparation:

1. Thaw the Sausages

- Place the frozen sausages in the fridge for about 4-6 hours (or overnight) to fully thaw.

2. Heat Source Options

You have got plenty of choices here. Each method brings out different flavours:

- Grill: Ideal for smoky, crispy edges and that outdoor barbecue flavour.
- Stovetop (Pan-fry): Great for a quick sear and juicy inside.
- Oven: Good for slow and even cooking, allowing the sausages to stay moist while developing flavour.
- Air fryer: Quick and ensures crispiness with minimal effort.

3. Cooking the Sausages

Grill:

1. Preheat the grill to medium heat.
2. Lightly brush the sausages with olive oil (optional) and place them on the grill.
3. Grill for about 10-12 minutes, turning them occasionally to ensure even browning. They should be nicely charred and fully cooked (internal temperature of 71°C).
4. Let rest for a couple of minutes before serving.

Stovetop (Pan-fry):

1. Heat a skillet over medium heat and add a touch of olive oil if desired.
2. Place the sausages in the pan, turning them every few minutes to brown all sides evenly.
3. Cook for 10-12 minutes, until golden brown and cooked through. You can add fresh rosemary or thyme sprigs to the pan for extra flavour.
4. Serve hot with a fresh squeeze of lemon.

Oven:

1. Preheat the oven to 190°C.
2. Line a baking sheet with parchment paper and place the sausages on it.
3. Bake for 20-25 minutes, turning halfway through. Check they are fully cooked (internal temperature of 70°C).
4. Let them rest for a few minutes before serving.

Air Fryer:

1. Preheat your air fryer to 190°C.
2. Place the sausages in the basket in a single layer.
3. Cook for 10-12 minutes, shaking the basket halfway through for even browning.
4. Once done, remove and let them rest for a minute before serving.

Original Recipe: Herb-infused Criollo Sausages with Lemon & Garlic

1. Pan-fry or grill the thawed sausages as per the instructions above.
2. In the last 3-4 minutes of cooking, toss in a few sprigs of fresh thyme or rosemary into the pan or grill.
3. For a burst of flavour, add a couple of crushed garlic cloves to the pan and let them sizzle in the sausage fat until golden.
4. Once the sausages are cooked, remove them from heat and drizzle with a little fresh lemon juice.
5. Serve with a side of lightly dressed salad or crusty bread to soak up the flavours!

A big hit!

The Criollos formed part of a post New Year celebrations brunch, and they went down a treat. The previous evening saw us enjoying the Iberico pork cheeks which were superb. A Real Find.

Slightly heavier than British pork sausages. They have a higher meat content and a better quality of meat and are not spicy. I have substituted for pork sausages for a more satisfying result. I have also substituted for Chorizo for a mllder result. I will be keeping a couple of packs in the freezer for high quality store-cupboard meals.
