Iberico Pork Secreto
Iberico Pork Secreto is one of Spain’s best-kept secrets! A fantastically tender and highly prized hidden behind the shoulder and under the back fat. Secreto has a long grain that appears like stripes from the dense marbling found in this particular cut, it has the distinctively rich and nutty flavour from eating an acorn diet.
The Secreto is a wide, flat piece of meat and each pack contains two pieces, perfect for cutting into smaller steak sizes. Ideal for flash frying and serving over vibrant fresh salads or warming bowls of risotto. The stripes of marbling in this cut turn a gorgeous golden brown, adding colour, texture and an abundance of flavour to any dish.
For a simple evening meal, cut into 3-4inch pieces. Season with salt and a little oil. Heat a griddle pan or frying pan and fry off for a couple of minutes on each side, or until a rich golden brown colour appears. Let the steaks rest for 4 minutes. You will notice the steaks have puffed up quite a bit, this is where all the delicious fat has melted and is adding flavour into the meat. Slice, across the grain, and serve straight away. Serve alongside warm crusty bread, a salad of artichoke, olives, capers and onions with a zesty dressing covering.
