This steak is 300 grams and is a great sharing option that can serve up to three people. Because of its richness, 100g portions should be plenty for one.
Ways to Cook
Sukiyaki
Simmer briefly in soy, mirin, sake, and a little sugar. Dip in raw egg, serve with silken tofu, spring onion, and udon to catch the broth.
Wagyu Don
Sear fast in their own fat, deglaze with soy and mirin, serve over short-grain rice with a soft-cooked egg and pickled ginger.
Shabu-Shabu
Pass each piece through barely simmering kombu dashi for seconds, not minutes. The fat should just soften. Sesame dipping sauce, shredded nappa cabbage alongside.
Tartare
Chop coarse, not minced. Shallot, capers, Dijon, a little Worcestershire. The marbling means little or no egg yolk is needed. Serve on sourdough or with thin frites.
Pasta al Wagyu
Sear hard, remove, build a quick sauce in the same pan with shallot, white wine, and butter. Toss with fresh tagliatelle, return the meat off the heat. Black truffle if you have it.
Scrambled Eggs & Wagyu
Soft-scramble eggs in butter over low heat, fold in lightly seared pieces at the end. Fleur de sel, chives. Simple and hard to beat.
Bourguignon
Sear in batches, braise low and slow in a full bottle of Burgundy with lardons, shallots, and garlic. No more than 90 minutes, the fat renders into the sauce and does the rest. Finish with pomme purée.
