Description
Our Freedown Hills products are fed for 14 months on grass before being moved onto a grain ration for a further 7 months. For the last four months, a caramelised olive feed is combined with the grain, and it is this that works to develop a unique light umami taste profile. Therefore, if you love beef tongue, there is no better tongue than this one.
Depending on your planned cooking method, removing the skin and further preparation might be required. Marinated or slow-braised beef tongue is a classic Eastern European dish. For Asian style dishes, the tip of the tongue is good for stewing, the middle can be thinly sliced and fried and the end can be cooked as steak.
Tongue meat is high in calories and fatty acids, as well as zinc, iron, choline, and vitamin B12.

Cooking Instructions
Wagyu Beef Tongue - Simmer and Peel
±1.3kg whole, skin on. Serves 6 to 8. Defrost 20–22 hours. Allow 4 hours to cook.
1. Defrost
Move the pack from freezer to fridge. Leave it in the vacuum pack, on a tray. Allow 20 to 22 hours. Cook within 24 hours of defrosting. Do not refreeze.
2. Rinse
Unwrap and rinse the tongue under cold running water. Pat it dry. The skin stays on. It protects the meat through the long cook.
3. Simmer
Put the tongue in a deep pot and cover it with water by 5cm. Add a halved onion, a carrot, two bay leaves, a teaspoon of peppercorns and a good pinch of salt. Bring it to a bare simmer. Never let it boil.
4. Cook until tender
3 to 3½ hours for a tongue this size. It is ready when a skewer slides into the thickest part with no resistance. Undercooked tongue will not peel.
5. Peel while it is hot
This is the step that decides the result. Lift the tongue out and leave it 5 minutes, just until you can handle it. Slit the skin along its length with a small knife and pull it away. It should come off in sheets. Once the tongue cools the skin sets hard and will not come off.
6. Trim
Turn it over and trim the gristle, small bones and glands at the root end. Keep the smooth middle and the tip.
Method A - Serve hot (braised, the classic treatment)
7. Slice across at 1cm, working from the tip back. The texture is finest at the tip and richest towards the root.
8. Sear the slices in a hot pan with a little neutral oil, 30 seconds a side, for crisp edges. Or serve them straight from the pot.
9. Something sharp cuts the richness. Salsa verde, horseradish cream, mustard, or a soy and ginger dressing.
Method B - Press, chill and grill (gyutan style, or cold as charcuterie)
7. Wrap the peeled tongue tightly into a firm cylinder and chill overnight. It slices far more cleanly cold.
8. Slice at 3 to 5mm for grilling, or at 2mm to serve cold as charcuterie.
9. Grill the thin slices over a high heat, 30 to 60 seconds a side, until the edges catch. Finish with lemon and salt, or a yakiniku sauce.
Keep the poaching liquid. Strain it and hold it back. It makes an excellent base for a ramen broth or an onion soup.

Storage
If chilled
Keep refrigerated at 0-4°C in its unopened vacuum pack and use by the date on the label. You can freeze it unopened at any point up to that date - at -18°C or below it will keep well for up to 12 months.
If frozen
Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, allow 20-22 hours. Never defrost at room temperature or in a microwave.
Once opened or defrosted, keep refrigerated at 0-4°C and use within 24 hours. Do not refreeze once thawed.

Well packed individually. Good practice. More than 50% of tongue can grill after trimming. A usual one from the market around 1/3 are usable. Nice deal.
