Description

British Wagyu Harami, also known as skirt steak, is a prized cut renowned for its rich flavour and distinctive marbling. Cooking Instructions

Wagyu Harami - Griddle or Barbecue

±220g, sliced 4mm. Serves 2. Defrost 7 hours. Under 3 minutes of cooking.

1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 7 hours. Cook within 48 hours of defrosting. Do not refreeze.

2. Separate and dry the slices
Peel the slices apart while they are still cold and firm. Lay them on kitchen paper and pat both sides dry. At 4mm they colour in seconds, but only if the surface is dry.

3. Season, or marinate briefly
Salt alone is enough. For the Japanese treatment, toss the slices in miso, or in soy sauce with a little mirin and grated garlic. Fifteen minutes is plenty. Dry them again before they meet the heat.

4. Get the heat as high as it goes
A griddle pan, a heavy frying pan, or a barbecue over direct coals. Give it 3 to 4 minutes. Add a neutral oil with a high smoke point, or none at all on a barbecue.

5. Cook in one layer, in batches
45 to 60 seconds a side, turning once. Leave space between the slices. Crowding drops the heat and the meat releases its liquid instead of searing.

6. Stop at medium rare
The centre should stay pink. Harami is a hard-working muscle carried by its marbling, and it is the one cut here that turns from tender to tough in under a minute of extra heat.

7. Rest briefly and serve
A minute on a warm plate, no longer. Finish with flaked salt and a squeeze of lemon, or serve with rice and a dipping sauce. Cook as you eat, in rounds, rather than all at once.

- 500g Wagyu Beef Harami (pre-sliced)
- 1 tbsp soy sauce
- 1 tbsp sake (or mirin)
- 1 tbsp sesame oil
- 1 clove garlic (minced)
- 1 tsp ginger (grated)
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp sesame seeds (optional)
- 1 green onion (chopped, for garnish)

Instructions

1. Marinate the Beef

1. Mix Marinade: In a bowl, combine soy sauce, sake, sesame oil, garlic, ginger, salt, and black pepper.
2. Coat the Beef: Add the pre-sliced Wagyu and gently mix until fully coated. Let it sit for 5 to 10 minutes at room temperature.

2. Preheat the Cooking Surface

3. Use a Hot Pan or Grill: Heat a cast-iron pan or grill over high heat until very hot.
4. No Extra Oil Needed: The Wagyu's natural fat will provide enough oil for cooking.

3. Cook the Wagyu Harami

5. Quick Searing: Spread the beef slices in a single layer and sear for 30 to 45 seconds per side. Flip only once for the best caramelisation.
6. Do Not Overcook: Wagyu is best enjoyed medium-rare (~54 to 57°C internal temp). Cooking too long can dry it out.

4. Rest & Serve

7. Rest for Juiciness: Remove from heat and let the beef rest for 2 minutes.
8. Garnish & Serve: Sprinkle with sesame seeds and chopped green onions. Serve with rice or grilled vegetables.

Defrost in the fridge, in its packaging, on a plate. Allow 7 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0-4°C and cook within 2 days.
Do not refreeze once thawed.

I thought it was very flavoursome, i also purchased two olive fed picanha and a A4 japanese wagyu. Sirloin steak - quite disappointing was the A4 steak it was brown rather than bright red which i have had in japan a few times - the olive fed wagyu was very good indeed and wiuld highly recommend trying it

Regarding the Wagyu Japanese Beef Striploin Steak, slight discolouration can occasionally occur due to the skin-packing process. However, once exposed to air, the meat will return to its vibrant red colour within about 30 minutes. Rest assured, this does not impact the quality or taste of this exquisite beef.
