Description

Terre Exotique’s Sesame Seed with Kimchi are roasted sesame seeds seasoned in the style of kimchi, Korea’s fermented vegetable dish, in a 50g tin.

The seeds bring crunch and a warm, lightly spicy flavour that is both savoury and slightly sweet. Soy sauce and bonito extract add depth, and the finish is of roasted nuts and garlic.

The seeds come from Terre Exotique, the French spice house founded by Erwann de Kerros, a traveller from Brittany. The company works directly with growers and packs its blends in metal tins or glass jars, which keep out light and protect the aroma between uses.

Sprinkle them over poultry, noodles, rice dishes or grilled fish, or use them as a crust before cooking.

Ingredients

Roasted sesame, Sesame, Sugar, Garlic, Salt, SOY sauce (including WHEAT), Flavour enhancers (E621, E635), Protein hydrolysate, Red hot pepper, Colouring (paprika extract), BONITO extract, sweetener (E960a), Acidulate (E330).
Possible traces of: Celery, Mustard, Nuts, Peanuts.

Cooking Instructions

50g, by Terre Exotique. Roasted sesame seasoned in the style of Korean kimchi.

Method A – Sesame-crusted salmon (serves 2)

1. Prepare
Pat 2 salmon fillets dry. Sprinkle about 2 tbsp of the seeds over both sides and press them on gently.

2. Cook
Heat a little oil in a non-stick pan over a medium heat. Cook the salmon skin side down for about 4 minutes, then turn and cook for 2 to 3 minutes more. Keep the heat moderate so the seeds toast and do not scorch.

3. Serve
Serve with rice and steamed greens.

Method B – As a seasoning

1. Sprinkle over steamed rice, noodles or ramen just before serving for crunch and flavour.

2. For duck skewers, cut duck into thin strips and thread onto skewers. Brush with honey, roll in the seeds and grill until golden.

3. Scatter over grilled vegetables, salads or the top of burger buns.

What it goes with. Salmon, tuna, duck and chicken. It also suits rice, noodles, ramen and grilled vegetables.

Terre Exotique collaborates directly with hundreds of expert farmers and producers worldwide to source the finest peppers, spices, and salts. The company was founded by Erwann de Kerros, a seasoned traveler from Brittany, who was inspired to explore the world of specialty spices after tasting pepper at the Penja plantation in Cameroon.
Committed to sustainability, Terre Exotique partners with farmers to protect natural habitats and support local communities by ensuring a stable income. The company prioritizes environmentally friendly packaging, using metal tins or glass jars instead of plastic. These containers effectively preserve the flavours and aromas of the spices by shielding them from sunlight, keeping the ingredients fresh for longer.
