Description

The ribeye is the steak most associated with great American beef, generously marbled, deeply flavoured, and forgiving to cook. Ours is cut from Creekstone Farms in Kansas, one of the most respected independent beef producers in the United States, and graded USDA Prime: the highest tier of the American grading system, awarded to only the top 3% of beef for the depth and distribution of its marbling.

Creekstone's cattle are Black Angus, raised on a strict natural protocol with no hormones, no antibiotics, and an all-vegetarian diet. Animal welfare is certified to standards developed by Dr Temple Grandin, the leading authority in the field. The fine intramuscular marbling runs throughout the eye of the steak and melts as it cooks, giving the ribeye its characteristic richness, juiciness, and full-bodied flavour.

Best brought to room temperature before cooking, then seared hard in a heavy pan or over direct heat. Season simply with salt, finish with butter if you like, and rest for several minutes before serving.

Cooking Instructions

USDA Prime Ribeye Steak - Pan or Barbecue

±250g or ±450g. Serves 1 to 2. Defrost 12–24 hours. Around 6 minutes in the pan.

1. Defrost
Move the pack from freezer to fridge, unopened. Allow 12 to 24 hours. Cook within 24 hours of defrosting. Do not refreeze.

2. Temper
Out of the fridge 40 minutes before cooking, or an hour for the 450g.

3. Dry and season
Pat every surface completely dry. Salt generously. Hold the pepper until after. It burns in a hard sear.

4. Render the fat edge first
Heat a heavy pan for 3 to 4 minutes. Stand the steak on its fat edge with tongs until bronzed and the pan has a film of rendered fat. You need no other oil.

5. Sear
Lay the steak flat in its own fat. 2½ to 3 minutes a side for the 250g, 3½ to 4 for the 450g. Turn once.

6. Pull at 52°C
Medium rare. The ribeye is the most forgiving steak on the animal, because the fine marbling through the eye melts as it cooks and keeps it moist. That forgiveness runs out past medium.

7. Rest
6 to 8 minutes on a warm plate or a rack. Do not cover tightly.

8. Find the cap before you slice
The crescent around the outside, separated by a seam of fat, is the spinalis. It is the best eating on the steak and its grain runs differently from the eye. Cut it away, then slice both parts across their own grain at 1cm.

Optional: melt a flavoured butter over the rested steak rather than cooking it in the pan.

Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 15 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0-4°C and cook within 2 days.
Do not refreeze once thawed.
