Cooking Instructions
New Zealand Diced Fillet – pan-fried
±300g. Serves 2. Preparation 5 minutes. Cooking approximately 5–8 minutes, depending on piece size.
1. Defrost in the fridge
If frozen, leave the pack unopened on a plate in the fridge until fully thawed. Follow the pack's storage and use-by instructions.
2. Dry and season
Pat the pieces thoroughly dry with kitchen paper. Season with fine sea salt; add black pepper after cooking.
3. Heat the pan
Heat a heavy-based frying pan over medium-high to high heat. Add a little neutral oil with a high smoke point.
4. Sear in batches
Arrange the beef in a single layer with space between the pieces. Sear for 1–2 minutes without moving, then turn to brown the remaining sides. Avoid overcrowding.
5. Finish cooking
Reduce the heat if needed and cook until thoroughly cooked through. Allow roughly 5–8 minutes in total, depending on the size of the pieces. Check the centre of the largest piece with a food thermometer.
6. Rest briefly
Transfer to a warm plate and rest for 2–3 minutes.
7. Serve
Serve immediately with vegetables, mashed potatoes or a pan sauce. For stroganoff, add the beef to the finished sauce just before serving.
Optional: Finish with a little flavoured butter, garlic and thyme, tossing briefly to coat.

FAQs
What dishes can I make with diced fillet?
New Zealand Diced Fillet is wonderfully versatile. It's ideal for beef stroganoff, stir-fries, steak bites, skewers and quick pan-fried dishes. Its tender texture also makes it an excellent choice for entertaining or preparing a restaurant-quality meal at home.
Is diced fillet suitable for slow cooking?
Although diced fillet can be used in a variety of recipes, it is best suited to quick cooking methods. As fillet is naturally tender and very lean, prolonged slow cooking can cause it to become dry. For slow-cooked stews and casseroles, cuts such as chuck or shin are generally more suitable.
Should I season diced fillet before cooking?
Yes. Seasoning with salt and freshly ground black pepper helps bring out the beef's natural flavour. For a beautifully caramelised exterior, pat the pieces dry before adding them to a hot pan. You can also finish with butter, garlic and fresh herbs.
What sauces pair well with diced fillet?
The delicate flavour of fillet pairs beautifully with creamy peppercorn sauce, mushroom sauce, garlic butter, red wine reductions and chimichurri. For Asian-inspired dishes, try a light soy, ginger and sesame dressing.
