Slow-rendered from Japanese A5 Wagyu trimmings, this is one of the finest cooking fats you can buy. Richer in flavour than standard beef dripping, cleaner on the palate than duck fat, and more refined than conventional beef tallow, Wagyu beef dripping is the professional kitchen's secret weapon, now available to cook with at home.

Why Wagyu dripping is different

Wagyu cattle carry an unusually high proportion of oleic acid, the same monounsaturated fat found in olive oil, giving their fat a lower melting point, outstanding heat stability, and a clean finish that ordinary beef tallow simply cannot match. Rich in monounsaturated fats and omega fatty acids, it cooks without the heavy, greasy residue left by standard cooking fats, adding a subtle, sweet depth that enhances every dish.

How we make it

We pass A5 Wagyu fat trimmings through a mincer to maximise surface area, then render them slowly in a bratt pan over a low, controlled heat for several hours. The fat melts gently, releasing a pale, silky liquid without any bitterness or burnt notes. We stir throughout to ensure an even render, strain the liquid through fine muslin to produce a beautifully clear dripping, then pour it immediately into sterilised jars while still piping hot. The heat of the fat itself creates a natural vacuum seal as it cools, preserving the dripping without additives or artificial preservatives.

The result: a pale, buttery Wagyu cooking fat with a delicate sweet, beefy aroma and exceptional depth of flavour.

How to use Wagyu beef dripping

Searing Wagyu steak: Add a spoonful to a very hot pan before cooking. Wagyu dripping amplifies the beef's natural character, particularly effective with fillet, which renders less of its own fat during cooking.

The best roast potatoes: Heat 1–2cm of Wagyu dripping in a heavy-bottomed pan over medium-high heat. Par-cook your potatoes, rough up the edges, and roast until deeply golden and crisp. Finish with fleur de sel. No other cooking fat comes close.

Everyday cooking: Use in place of beef dripping, duck fat, lard, or vegetable oil for chips, Yorkshire puddings, roasted root vegetables, hash browns, and pan sauces. The result is consistently cleaner and more refined than any conventional cooking fat.
