Description

The loin is found within the midsection of the back of Iberico Pata Negra pigs. One of the leanest and tender cuts. Known as the “Wagyu of Pork” the meat has a beautiful marble of fat running through it providing a delectable taste with each morsel.

Containing two ±125g steaks per pack, it has a stunning layer of fat covering the top of the muscle. When roasted it turns a beautiful nutty golden brown. The loin has a creamier and smoother flavour with more texture than that of other cuts of the Iberian pork.

Cooking Instructions

Iberico Loin Steaks - Pan, Plancha or Barbecue

±125g x 2. Serves 1 to 2. Defrost 6–8 hours. Around 5 minutes in the pan.

1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 6 to 8 hours. Cook within 48 hours of defrosting. Do not refreeze.

2. Temper
Out of the fridge 25 minutes before cooking.

3. Dry and season
Pat both sides completely dry and salt just before cooking.

4. Heat the pan
Heavy pan, plancha or barbecue, 3 minutes to come up. The loin is the leanest cut on the animal, so unlike the secreto or the collar it wants a little olive oil in the pan.

5. Sear
2 to 2½ minutes a side, turning once. Then hold each steak on its fat edge with tongs for 30 seconds.

6. Pull at 63°C, and watch it closely
This is the cut in the Iberico range with the least fat to protect it. It goes from juicy and faintly pink to dry very quickly, so use a probe rather than guessing.

7. Rest
4 minutes on a warm plate. Do not cover tightly.

8. Serve
Whole, with flaked salt. Being leaner, the loin takes a sauce better than the other cuts here. Apple, mustard or a sherry pan sauce all suit it.

Delivered frozen
Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 6–8 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0–4°C and cook within 2 days.
Do not refreeze once thawed.
