Description

Iberico Pork French Chops are cut from the loin, between the hips and shoulders of the Iberico Pata Negra Pigs. French Chop means the rib bone has been removed of meat and is visible. Think of a classic pork chop with the addition of the rich, beautiful, nutty-sweet flavour unique to Iberico. Known as the Wagyu of pork with its heavy marbling, it is above and beyond anything you have tasted before.

We strive for precision with every hand-cut order. Please note that natural variations occur, and we maintain a weight tolerance of ±8%, which is reflected in our pricing. Cooking Instructions

Iberico French Chops - Pan and Oven, or Barbecue

±300g. Serves 1 to 2. Defrost 12 hours. Around 12 minutes of cooking.

1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 12 hours. Cook within 3 days of defrosting. Do not refreeze.

2. Temper
Out of the fridge 30 minutes before cooking. These are thick chops on the bone and a cold core will leave the centre underdone.

3. Dry and season
Pat dry all over and salt generously just before cooking.

4. Render the fat edge first
Heat a heavy ovenproof pan for 3 minutes. Stand the chops on their fat edge with tongs until it is golden and the pan has a film of rendered fat. Then lay them flat.

5. Sear, then finish in the oven
2 to 3 minutes a side to colour, then transfer the pan to a 180°C oven for 5 to 7 minutes. On a barbecue, sear over direct heat then move to the cool side with the lid down.

6. Pull at 63°C
Probe the thickest part, away from the bone. The bone insulates and will read cold. Still faintly pink at the centre is right.

7. Rest
6 minutes on a warm plate. Do not cover tightly.

8. Serve
On the bone, with flaked salt and the pan juices. Roasted peppers, apple or a sherry sauce all suit them.

Defrost in the fridge, in its packaging, on a plate. Allow 12 hours.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0–4°C and cook within 3 days.
Do not refreeze once thawed.

Just order them!!

These extremely good value chops are possibly my favourite item on the website. This meat is the greatest quality, the fat is like butter and is great for 2 people or a very greedy 1 (Don't judge!) The flavour is tremendous and cooked slightly pink is perfect! I have also beat them up and flour, egg and panko for a schnitzel, cooked in some of the iberico rendered fat and butter... incredible!

Great cut for a 2 person meal
Simply seasoned with salt and pepper then Roasted for 20 min in my wood oven
I then cut the joint in 2 and cooked for a further 5 minutes
Fabulously tasty and succulent
The best pork chop I’ve ever eaten
