Iberico pork boneless short collar neck, also known as 'Mogote,' is a prized cut from the Spanish Pata Negra pigs renowned for their superior quality. This cut is flavourful and tender, with a rich marbling that enhances its succulence when braised or slow-cooked. Cooking Instructions
Iberico Mogote - Slow Roast or Braise
1kg short collar neck. Serves 4. Defrost 24 hours. 3 to 3½ hours in the oven.
1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 24 hours. Cook within 3 days of defrosting. Do not refreeze.
2. Salt it ahead
Pat dry and salt generously all over. A few hours uncovered in the fridge is enough for a piece this size.
3. Brown it first
Sear the whole piece hard on every side in a casserole. The mogote is the short end of the collar, marbled through, and it renders its own fat as it colours.
4. Low and slow
Oven at 140°C for 3 to 3½ hours. To roast, set it on a rack over a tray. To braise, add stock and sherry to come a third of the way up and cover the pot.
5. Test by feel, not by temperature
It is ready when a fork twists in the meat with no resistance. Pulled early, a collar cut is tough rather than underdone.
6. Rest
20 minutes on a board before carving or pulling.
7. Serve
Thick slices across the grain, or pulled apart with two forks. Good with roasted peppers, or in buns with something sharp and pickled.

Storage
Delivered frozen
Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 24 hours.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0–4°C and cook within 3 days.
Do not refreeze once thawed.

I've had the 2kg collar, but this time had to settle for a smaller one.... but not to worry, there was still (with some pig cheeks) enough to feed 5 in a cook up. Although it's a fatty-ish piece, there's loads of meat and (sacrilege for some) I did this sous vide and it effectively confit-ed . Super tender, super tasty. Can take a healthy amount of seasoning.
Unfortunately no photos of the finished product as it got inhaled before I'd got around it...
