Description
Iberico Pork Ribs are from the top of the rib cage, near the spine, of Spanish Pata Negra pigs. Lean and nutty, these succulent ribs have the signature Pata Negra marbling which gives the meat its juicy tenderness.
We strive for precision with every hand-cut order. Please note that natural variations occur, and we maintain a weight tolerance of ±8%, which is reflected in our pricing. Should a selection fall outside this range, we will contact you directly to ensure your order meets our standards and your expectations.
Cooking instructions
1. Thaw the Ribs:
Take the ribs out of the freezer and let them thaw in the refridgerator overnight.
2. Preheat the Oven:
Set your oven to 150°C. This low, slow heat will help keep the Iberico ribs tender.
3. Season the Ribs:
Pat the ribs dry with paper towels, then generously season with salt, pepper, garlic powder, and smoked paprika for a smoky flavour. Feel free to add any favourite herbs or spices! we have some amazing ones in stock.
4. Wrap in Foil:
Place the seasoned ribs on a large sheet of foil. Wrap them tightly to lock in moisture. You can add a splash of stock for extra juiciness.
5. Bake Low and Slow:
Place the wrapped ribs on a baking tray and cook for 2.5 to 3 hours. The ribs should become tender and the meat will pull away easily from the bone.
6. Add BBQ Sauce (Optional):
For a sticky, flavourful finish, remove the ribs from the oven, unwrap, and brush on your favourite barbecue sauce.
7. Broil for a Crispy Finish:
Turn the oven to broil (or high heat) and pop the ribs back in uncovered for 5-7 minutes until the sauce is caramelized and the edges are crispy.
8. Rest & Serve:
Let the ribs rest for 5 minutes before slicing. Serve with your favourite sides and enjoy the rich, marbled goodness of Iberico pork!
