Description
Made with free-range chicken, breast and leg meat, and seasoned with red chilli, garlic, coriander and Kaffir lime leaf. Filled into natural hog casing.
The chilli brings warmth more than heat, the lime leaf lifts it, and the coriander keeps everything fresh and green. They're three-quarters chicken, so the spice sits on flavour rather than filler.
Brighter and bolder than the everyday sausage, and at home with rice, noodles, or simply a squeeze of lime. Good in a pan or on the grill, any time of year.

Cooking Instructions
Thai Chilli, Lime & Coriander Chicken Sausages - Pan, Oven or Barbecue
±450g. Serves 2 to 3. Defrost 10 hours. Around 15 minutes of cooking.
1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 10 hours. Cook within 48 hours of defrosting. Do not refreeze.
2. Do not prick them
Chicken sausages are leaner than pork and have little fat to spare. Pricking lets out the moisture that keeps them succulent.
3. Medium heat
A heavy pan on a medium heat with a spoon of oil. Being lean, these do not render enough fat to cook in on their own, and a fierce heat splits the skins.
4. Turn them often
12 to 15 minutes, turning every couple of minutes, until evenly golden and firm. In the oven, 20 minutes at 200°C on a rack over a tray. On a barbecue, indirect heat first and a minute over the coals at the end.
5. Cook to 75°C
Probe the centre of the thickest sausage. Chicken is cooked through, never pink.
6. Rest and serve
3 minutes, then a squeeze of lime. These suit rice, a crunchy herb salad, or a noodle bowl rather than the usual sausage accompaniments.

Storage
Delivered frozen. Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 10 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0–4°C and cook within 2 days.
Do not refreeze once thawed.
