Description

Made with free-range chicken (breast and leg meat), and seasoned the way a classic should be: sage and cracked black pepper, and little else. Filled into natural hog casing.

The leg gives them their succulence, the breast keeps them light, and the sage does what sage has always done in a good sausage, warm, savoury, familiar. They're three-quarters chicken, so what you taste is chicken.

Leaner than pork, and unmistakably traditional. At home with mash and onion gravy, or pressed into a sandwich with a some mustard from Edmond Fallot.

Six free-range chicken sausages to a pack.

Cooking Instructions

Classic Herb Fed Chicken Sausages - Pan, Oven or Barbecue

±450g. Serves 2 to 3. Defrost 10 hours. Around 15 minutes of cooking.

1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 10 hours. Cook within 48 hours of defrosting. Do not refreeze.

2. Do not prick them
Chicken sausages are leaner than pork and have little fat to spare. Pricking the skins lets out the moisture that keeps them succulent.

3. Medium heat, and a little oil
A heavy pan on a medium heat with a spoon of oil. Being lean, these will not render enough fat of their own to cook in. High heat splits the skins before the centre is done.

4. Turn them often
12 to 15 minutes, turning every couple of minutes, until evenly golden and firm. In the oven, 20 minutes at 200°C on a rack over a tray. On a barbecue, indirect heat first and a minute over the coals at the end.

5. Cook to 75°C
Probe the centre of the thickest sausage. Chicken is cooked through, never pink, and these should show no trace of it.

6. Rest and serve
3 minutes. Good with mash and onion gravy, or in a roll with mustard.

  • Herb Fed - Yorkshire Bred

North Yorkshire is one of England's great farming counties. Wide open skies, patchwork fields, and a long tradition of rearing food properly. It's here that Herb Fed has quietly built one of the finest poultry farms in Britain. The landscape does what good land always does: it lets time and space do the work.
