This whole bronze turkey from HERB FED in North Yorkshire showcases the very best of traditional, slow-grown poultry. Raised on expansive pasture and enjoying the same signature herb-enriched diet - with fresh basil, dill, coriander, and other aromatic trimmings - these genuinely free-range birds develop exceptional depth of flavour. With significantly longer growing times than standard turkeys, they mature naturally, resulting in meat that is noticeably richer, juicier, and more tender. Whether for a special occasion or a standout roast, HERB FED turkeys offer outstanding quality and a beautifully nuanced taste that sets them apart.

How to prepare your turkey

Oven-Ready Turkey (7–8 kg) with Sage & Onion Stuffing

(Frozen → defrosted before cooking)

Before you start – Defrosting (important)

A 7–8 kg turkey takes 4–5 days to defrost safely in the fridge.

How to defrost
1. Keep the turkey in its original packaging.
2. Place it on a tray to catch any liquid.
3. Put it on the bottom shelf of the fridge at 0–5°C.
4. Allow 4–5 days to fully defrost.
5. The turkey is ready when:
• There is no ice in the cavity
• The meat feels soft and flexible

Do not defrost at room temperature.

You will need
• 1 turkey (7–8 kg), fully defrosted
• 75–100 g butter, softened
• Salt and black pepper
• Foil
• Large roasting tray

For the stuffing
• 1 large onion, finely chopped
• 2 tbsp butter
• 100 g breadcrumbs
• 2 tsp dried sage
• 1 egg, beaten
• 100 ml chicken stock
• Salt and black pepper

Step-by-step method

1. Preheat the oven

Preheat the oven to 180°C (160°C fan).

2. Prepare the turkey

1. Remove all packaging and giblets.
2. Pat the turkey dry with kitchen paper.
3. Carefully loosen the skin over the breast using your fingers.
4. Spread the softened butter under the skin, directly onto the breast meat.
5. Season the outside of the turkey with salt and pepper.
6. Place the turkey breast-side up in a roasting tray.
7. Cover loosely with foil.

3. Start roasting

1. Place the turkey in the centre of the oven.
2. Roast for 3 to 3½ hours, keeping it covered.

4. Make the stuffing

1. Gently cook the onion in butter until soft.
2. Mix with breadcrumbs, sage, egg, stock, salt, and pepper.
3. Place in an oven dish and cover with foil.

5. Brown the turkey and cook the stuffing

1. Remove the foil from the turkey.
2. Place the stuffing in the oven.
3. Roast for a further 45–60 minutes, until the turkey skin is golden.
4. Uncover the stuffing for the final 15 minutes.

6. Check the turkey is cooked

• Insert a thermometer into the thickest part of the thigh and breast: minimum 75°C.
• Juices should run clear and there should be no pink meat.

7. Rest and serve

1. Remove the turkey from the oven.
2. Cover loosely with foil and rest for 30–45 minutes.
3. Carve and serve with the sage & onion stuffing.

Food safety
• Do not refreeze once cooked.
• Refrigerate leftovers within 2 hours and consume within 48 hours.
