This whole chicken from HERB FED in North Yorkshire is a testament to premium poultry. Raised on lush pastures, these truly free-range birds enjoy a herb-enriched diet from four weeks old, featuring fresh basil, dill, coriander, and more, which enhances the natural flavour of the meat. Slow-grown for up to twice the length of commercial chickens, they develop superior taste, tenderness, and succulence. Perfectly suited for any dish, HERB FED chickens deliver exceptional quality and a depth of flavour that truly stands out.

Ingredients

INGREDIENTS:

• 1 whole chicken (2.1 kg)
• 2 tbsp olive oil or melted butter
• 2 tsp sea salt
• 1 tsp freshly ground black pepper
• 3-4 cloves garlic (crushed)
• 1 lemon (halved)
• Fresh herbs (rosemary, thyme, parsley, or sage)
• 2 carrots (cut into chunks)
• 1 onion (quartered)
• 1 celery stalk (cut into chunks)

Instructions:

Preparation:

1. Preheat Oven: Set your oven to 200°C (fan-forced: 180°C).
2. Prepare Chicken: Remove the chicken from the fridge 30 minutes before cooking to bring it to room temperature. Pat dry with paper towels.

Seasoning:

3. Season the Inside: Stuff the cavity with the crushed garlic, halved lemon, and a few sprigs of fresh herbs.
4. Rub the Chicken: Mix olive oil (or melted butter) with salt and pepper, and rub it all over the chicken, ensuring even coverage.

Preparing the Roasting Tray:

5. Vegetable Base: In a roasting tray, place the carrot chunks, onion quarters, and celery to create a bed. This keeps the chicken elevated and adds flavour to the juices.

Roasting:

6. Place the Chicken: Position the chicken breast-side up on the vegetable bed.
7. Cooking Time: Roast the chicken for about 1 hour and 30 minutes. A general rule is 20 minutes per 500 g, plus an additional 20 minutes.
8. Check Temperature: Insert a meat thermometer into the thickest part of the thigh. The internal temperature should read 75°C. If not, cook for an additional 10–15 minutes and recheck.

Resting:

9. Rest the Chicken: Remove the chicken from the oven and loosely cover it with aluminum foil. Let it rest for 15–20 minutes to allow the juices to redistribute.

Serve:

10. Carve and Serve: Serve the chicken with the roasted vegetables and your choice of sides.

Good enough for Christmas

A taste from before factory farms. I had a 2.1 kg bird and followed the cooking instructions to produce perfect results. The bird was large and plump. The meat was succulent and flavourful. It was impressive for carving at the table and impressive on the plate.
