Cooking Instructions
Chicken Supremes, Skin-On - Pan and Oven
±750g. Serves 2. Defrost 16 hours. Around 15 minutes of cooking.
1. Defrost
Move the pack from freezer to fridge. Leave it in its packaging, on a plate. Allow 16 hours. Cook within 48 hours of defrosting. Do not refreeze.
2. Dry the skin and salt it
Pat the skin completely dry and salt it well. Out of the fridge 20 minutes before cooking. The skin is the best part of a supreme and it only crisps if it is dry.
3. Start skin side down in a cold pan
Lay the supremes skin down in a dry ovenproof pan, then turn the heat to medium. Starting cold renders the fat out of the skin slowly instead of seizing it. Press them flat with a spatula for the first minute.
4. Render until golden
8 to 10 minutes, skin side down, without moving them. The skin should be deep gold and crisp, and a pool of fat should have rendered out.
5. Turn and finish in the oven
Flip them, then transfer the pan to a 190°C oven for 6 to 8 minutes depending on thickness.
6. Cook to 75°C
Probe the thickest part. Chicken is cooked through, never pink. But take it off the moment it reaches temperature, because breast meat is lean and dries quickly beyond it.
7. Rest
5 minutes, skin side up so it stays crisp. Never tent a crisp skin tightly.
8. Serve
Whole or sliced. Deglaze the pan with white wine or stock and a knob of butter for an immediate sauce.

Storage
Delivered frozen. Keep frozen at -18°C until needed. Use by the date on the pack.
Defrost in the fridge, in its packaging, on a plate. Allow 16 hours. The pack will release liquid as it thaws.
Never defrost at room temperature or in a microwave.
Once defrosted, keep at 0–4°C and cook within 2 days.
Do not refreeze once thawed.

It is said you can detect stress in an animal's meat. If so, these were very happy birds.
These cuts are impressively large. They may be too large for the young, old or abstemious.
