Description

Terre Exotique’s Butcher Spice Blend brings together the classic seasonings of the French butcher’s counter in a single 30g pack: coriander, black pepper, rosemary, thyme, basil, oregano, marjoram and garlic.

Coriander and black pepper lead with warmth and a little heat, while rosemary and thyme add a woody, resinous note. Basil, oregano and marjoram round it out, and garlic gives the blend its savoury base.

The blend comes from Terre Exotique, the French spice house founded by Erwann de Kerros, a traveller from Brittany. The company works directly with growers and packs its blends in metal tins or glass jars, which keep out light and protect the aroma between uses.

Use it as a dry rub for grilled, roasted and braised meat, or scatter it into stuffing and work it into compound butter to finish a steak.

Ingredients

Coriander, Black pepper, Rosemary, Thyme, Basil, Oregano, Marjoram, Garic (SULPHITES).
Possible traces of: Celery, Sesame, Mustard, Nuts.

Cooking Instructions

Butcher Spice Blend – rub, butter or seasoning

30g tin, by Terre Exotique. Coriander, black pepper, rosemary, thyme, basil, oregano, marjoram and garlic.

Method A – Dry rub (serves 4)

1. Prepare the meat
Pat 4 steaks or lamb chops dry and brush each with a little oil.

2. Season
Rub 1 tsp of the blend onto each piece, then season with salt. The blend has no salt of its own. Leave for 20 minutes at room temperature.

3. Cook
Grill or sear over a high heat, turning once, until cooked to your liking. Oil helps keep the herbs from scorching, so don’t let the pan smoke.

4. Rest
Rest the meat for 5 minutes before serving.

Method B – Butter, roasts and stuffing

1. For a quick compound butter, beat 1 tsp of the blend into 50g soft butter. Roll it in cling film and chill, then slice it over rested steak.

2. For a roast chicken or small joint, rub 1 tbsp of the blend with oil over the meat before roasting.

3. For stuffing, stir 1 tsp through the mixture before cooking.

What it goes with. Steak, lamb chops, roast pork and roast chicken. It also suits roast potatoes and braised dishes.

FAQs
Does it contain salt?

No. The ingredients are herbs, pepper and garlic only, so season with salt separately.

Can I use it on chicken?

Yes. Rub it over the skin with oil before roasting.

Will the herbs burn on the grill?

Dried herbs can scorch over very high direct heat. Coat the meat with oil first and keep the heat steady.

Can I use it in a casserole or stew?

Yes. Stir 1 tsp into the pot early on so the herbs soften into the sauce.

Terre Exotique collaborates directly with hundreds of expert farmers and producers worldwide to source the finest peppers, spices, and salts. The company was founded by Erwann de Kerros, a seasoned traveler from Brittany, who was inspired to explore the world of specialty spices after tasting pepper at the Penja plantation in Cameroon.
Committed to sustainability, Terre Exotique partners with farmers to protect natural habitats and support local communities by ensuring a stable income. The company prioritizes environmentally friendly packaging, using metal tins or glass jars instead of plastic. These containers effectively preserve the flavours and aromas of the spices by shielding them from sunlight, keeping the ingredients fresh for longer.
