USDA Prime is the highest grade of American beef. Awarded to just the top 3% for its marbling and tenderness. Ours comes from Creekstone Farms in Kansas, where Black Angus cattle are raised slowly and naturally: no hormones, no antibiotics, an all-vegetarian diet, and welfare standards certified by Temple Grandin.

Cut from the short loin, the striploin, also known as the New York strip, sits in that sweet spot between richness and structure. More marbled than a fillet, firmer than a ribeye, with a deep, properly beefy flavour that needs very little help.
