Description

Prime fillet from New Zealand. The cattle are mainly English breeds – Angus, Hereford and Devon – raised on pasture and 100% grass-fed. Grass feeding gives a lean, fine-grained fillet with a clean, beefy flavour.

Our own butchers cut each steak by hand. Two steaks of ±150g, vacuum-packed and delivered frozen.

Cooking Instructions

Prime New Zealand Fillet Steaks – pan-seared

2 steaks of ±150g, delivered frozen. Serves 2. 100% grass-fed.

1. Defrost in the fridge
Leave the steaks in their pack, on a plate, in the fridge. Allow 24 hours. Once thawed, cook within 24 hours.

2. Bring to temperature
Take them out 30 minutes before cooking. Pat dry all over, sides included. Salt generously.

3. Heat the pan
Use a heavy pan on a high heat, with a neutral oil or beef dripping. Grass-fed fillet is the leanest beef there is. It renders almost nothing, so it needs fat in the pan.

4. Sear the faces
Sear for 2 minutes a side. Leave them alone while they colour.

5. Roll onto the edges
A 150g fillet is tall and narrow. Hold it with tongs and sear the sides, 30 seconds at a time, all the way round.

6. Go by the probe
Pull at 52°C for medium-rare or 56°C for medium. If the centre isn't there yet, lower the heat and turn the steak every minute. There is no marbling here to forgive an extra minute.

7. Rest
Rest for 5 minutes on a warm plate.

Give it a sauce. A grass-fed fillet carries no fat of its own to finish with. Béarnaise, peppercorn or a red wine jus all work, or melt a flavoured butter over the rested steaks.

FAQs
Who cuts the steaks?

Our own butchers cut each steak by hand from the whole fillet.

There’s a slight smell when I open the pack. Is that normal?

Yes. A faint metallic smell is normal for vacuum-packed beef. It disappears within a few minutes once the steaks are out of the pack.

What should I serve with them?

Béarnaise, a peppercorn sauce or a red wine jus all work well. A flavoured butter melted over the rested steaks is the simplest option. A lean fillet goes well with a medium-bodied red, such as Pinot Noir or a Côtes du Rhône.

Can I cook them sous vide?

Yes. Cook them in their pack at 52°C for 1 hour, after defrosting. Then pat them dry and sear hard in a very hot pan for 1 minute a side, plus the edges. You can also add butter and thyme in the pan to give extra flavour.
