The same species as the celebrated Périgord, grown on oak and hazelnut roots in the Karri loam soils of Western Australia's Southern Forests, one of the most significant truffle-producing regions outside Europe. Harvested June through August by trained dogs working the orchards at peak ripeness, at precisely the moment the European season goes quiet.

The aroma is deep and earthy, with dark mineral notes and a characteristic warmth that distinguishes a well-ripened Manjimup truffle. The interior is near-black with fine white marbling. Flavour is intense and persistent.

Enjoy them over fresh pasta, eggs, risotto, roasted meats, or buttery potatoes, or infuse their aroma into sauces and stocks for an elevated finish.

As we work with a natural product, slight weight variations of a few grams may occur, either lower or higher. We aim to remain within ±3g, and our pricing is structured to account for these natural variations.

Your fresh truffles are carefully wrapped in an absorbent paper towel and sealed inside an airtight pouch before dispatch. This protects their moisture levels, preserves aroma, and ensures they arrive in peak condition.

Once delivered, remove the truffles from their pouch immediately. Wrap each one individually in fresh absorbent paper and place them in an airtight container in the fridge. Replace the paper daily to maintain optimal freshness. For the finest aroma and flavour, enjoy your truffles within five days of arrival.

In the cool, rain-fed hills of Manjimup, some 300 kilometres south of Perth, the conditions for Tuber Melanosporum are as close to ideal as anywhere outside Europe. The Karri loam soils, rich and well-drained, the clean air of the surrounding national parks, and the sharp Western Australian winters combine to produce a black truffle of exceptional intensity. This region accounts for the majority of Southern Hemisphere production, and its season, running June through August, falls precisely when France, Spain, and Italy have none to offer.
