Description
These free-range yellow chickens are a heritage breed from the South-West region of France, lovingly raised in small batches across the Basque Country, Landes, and Béarn. Slow-growing and free to roam for over three months, they enjoy an all-natural, GMO-free diet that includes whole kernel corn, giving them their signature golden colour which gives them their unique taste. Maison Garat honour generations of tradition to ensure each chicken embodies craftsmanship and excellence.
Laetitia Garat is the 4th generation behind this beautiful house.
Over time, the Garat family have crafted some of the best poultry in France working with the best chefs in the country.

Ingredients
Ingredients:
• 1 free-range chicken from Maison Garat (± 1.3kg)
• 400 g of baby potatoes
• 6 shallots
• 3 garlic cloves
• 250 g of cherry tomatoes
• 100 g of butter
• 4 sprigs of thyme
• 2 sprigs of rosemary
• 2 bay leaves
• 2 tbsp chicken spice mix
• Pepper
Cooking Time: 10 min prep + 1 hour cooking
Instructions:
1. Preheat the Oven
Preheat the oven to 190°C.
2. Prepare the Chicken
Place the chicken in an ovenproof dish. Insert the bay leaves and rosemary between the chicken’s skin and flesh. Crush the garlic cloves, peel the shallots, and wash the potatoes. Arrange them around the chicken and place the thyme sprigs on top.
3. Season the Chicken
Sprinkle the chicken with the spice mix, then spread the butter over the surface of the chicken. Season with salt and pepper.
4. Roast the Chicken
Place the dish in the oven and roast for 45 minutes, basting the chicken regularly with its cooking juices.
5. Add the Tomatoes
Add the cherry tomatoes to the dish and return it to the oven for another 15 minutes.
6. Carve the Chicken
• To carve the roasted chicken, pierce the thigh with a fork and slide your knife between the thigh and breast. Pull the thigh outward to detach it.
• Separate the drumstick from the thigh by cutting through the joint, working with the cartilage. Repeat for the second thigh.
• Make a long incision down the length of the chicken’s breast. Remove the fillets by cutting along the carcass, working downward until you reach the wing joint. Detach the fillet and wing entirely.
• Separate the fillet from the wing. Repeat for the other side.
