Duke of Berkshire Pork Boneless Loin

Duke of Berkshire Pork Boneless Loin, is an old English breed of Pork. Reared since the 18th Century for its exceptional tenderness, taste and quality it is what Pork should be. With finely marbled meat and unctuous coverings of fat resulting in a full tasting and superb texture.

Containing one ±1kg piece, the Loin is where Back Bacon is cut from, beginning just below the shoulder and running down the backbone to the legs. Ours is trimmed to leave a nice thickness of fat covering, providing extra flavour and protection when cooking. The animals are predisposed to develop more fat within the meat, meaning even more delicious flavour and texture to the Loin than that found with other breeds of Pork.

Trying new flavours with the Duke of Berkshire Pork Loin is always exciting and interesting, to see what can stand up to the impressive and unique flavour. We have loved using star anise, ginger, garlic and five-spice with a splash of sherry and soy sauce. Sear in a pan to lock in all the flavour, then roast for 45 minutes in a preheated oven at 180. Remove from the oven, wrap tightly in tin foil and let rest for 30 minutes. Serve with sautéed Brussel Sprouts and Roasted Pumpkin.
