Pork Samgyeopsal

How to cook your Kurobuta Pork Samgyeopsal

Samgyeopsal (Grilled Kurobuta Pork Belly)

Ingredients:
• 300g Kurobuta pork belly (Samgyeopsal cut, ~0.5–1cm thick)
• Salt & black pepper (to taste)
• 1 tsp sesame oil (for finishing)
• Optional: sliced garlic, green chili, or mushrooms for grilling

For Ssam (wrap):
• Lettuce or perilla leaves
• Cooked rice
• Sliced raw garlic or green chili
• Kimchi

For Ssamjang (dipping sauce):
• 1 tbsp doenjang (fermented soybean paste)
• 1/2 tbsp gochujang (Korean chili paste)
• 1 tsp sesame oil
• 1 tsp honey or sugar
• 1 tsp minced garlic
• 1 tsp chopped green onion
• 1/2 tsp toasted sesame seeds



Instructions:
1. Prep the Pork:
• Pat dry and season lightly with salt and black pepper.
2. Make the Ssamjang Sauce:
• In a small bowl, mix all ssamjang ingredients until well combined.
• Set aside for serving.
3. Heat the Grill or Pan:
• Use a tabletop grill or a cast iron pan over medium-high heat.
• No oil is needed. Pork belly has enough fat to render.
4. Grill the Pork:
• Place pork belly slices flat on the grill or pan.
• Grill each side for 2–3 minutes until golden brown and slightly crispy.
• Add optional garlic slices or mushrooms to grill alongside if desired.
5. Cut into Bite-Sized Pieces:
• Use scissors or tongs to cut grilled pork into bite-sized chunks.
6. Serve:
• Arrange lettuce leaves, rice, grilled pork, kimchi, and ssamjang on a platter.
• Each bite: wrap rice + pork + kimchi + garlic/chili in a leaf with a dab of ssamjang.



Tips:
• Grill in batches to keep heat high and pork crispy.
• Pair with a cold beer or Korean soju for a full experience.

I found the meat thickness I like!
