Wagyu beef is undeniably the royalty of red meat. It’s beautiful to behold, graceful and dignified on the palette. Its best served simply. Grill for 2 minutes on each side in a smoking-hot heavy skillet and let it rest 5 minutes in a slightly warm oven. You won’t believe the flavour it has with just sea salt flakes. It goes well with restrained sides dishes that allow the Wagyu to demand the attention it rightly deserves. Oven roast Baby Portobello mushroom caps with sprigs of fresh rosemary alongside plum tomatoes for a dinner that will inspire students and master chefs alike.
To cook as a whole piece, season the outside with a little oil and salt. Sear on all sides in a really hot heavy based frying pan and transfer to a preheated oven for 20-30 minutes at 180. Remove from the oven and rest for 15 minutes. Serve sliced at the table with gorgeous roast potatoes, yorkshire puddings, a dollop of horseradish and some sweet carrots.
