Prime US Grain Fed Rump Cap Picanha

Favoured by the Brazilians this fantastic cut is versatile and perfect for family roasts through to a dinner party to impress the boss! 

Cut from the top of the Rump, the Picanha is triangular in shape with an inch of fat covering the meat. The shape of the Picanha means you can either roast it to serve a family of 6 or cut into steaks to grill or BBQ. This particular cut is more marbled and tender than the striploin with an unimaginable flavour to it.

Never again will a regular Beef roast be enough, once you have tried the exquisite taste of the US Grain Fed Rump Cap Picanha. Ready in just 40 minutes, it is a fail-safe!

Bring the Picanha to room temperature before cooking, score the cap of fat and rub sea salt and oil over the meat. Leaving extra salt on the fat to ensure it crisps up! Cook for 10 minutes in a oven pre-heated to full whack, around 230°C or as high as your oven will allow. This seals in all the gorgeous flavours in and the meat browns. After 10 minutes, or when the meat is golden brown turn the heat down to 180°C and cook for a further 15-25 minutes. Depending on how well done you want it. Remove from the oven, cover with foil and let rest for 10-15 minutes. 

Slice across the grain and serve either with traditional roast potatoes, parsnips and gigantic Yorkshire puddings or for a more traditional Brazilian flavour, serve sliced with bowls of Chimichurri Sauce and don't forget ice cold Coronas! 

Because of how tender this brilliant cut is you can make Beef Tartar, and still have meat left over for thick cut steaks. Nothing is better on a summers evening, than friends sitting round a table on the patio, cold glasses of Rose wine, crusty bread and a bowl of Tartar. 

Beef Tartar

  • 300-400g of Picanha with the cap cut off (use the point end to ensure perfect steaks from the fatter piece)
  • 2 Egg Yolks
  • Juice of 1 Lemon
  • 100ml Extra Virgin Olive Oil
  • 1 Tbsp Dijon Mustard
  • 1/2 Red Onion
  • 1 Echalion Shallot
  • 2 salted Anchovy Fillets 
  • 1 Tbsp Capers
  • 2 Tbsp Cornichons
  • Salt and Pepper to taste

Method

  1. Slice the point end of the Picanha into thin slices, cut into strips and then cut the other way into half centimetre dice. 
  2. Finely chop the Red Onion, Shallot, Capers, Cornichons and Anchovies  
  3. Add the chopped ingredients and diced Picanha into a bowl, add the egg yolks, lemon juice, Olive Oil and Mustard. 
  4. Mix thoroughly, to bind all the ingredients together. 
  5. Season with salt and pepper to taste.

It takes longer and creates more work to raise cattle using these guidelines, but we think it's the right thing to do.
