Silence is always golden, especially when it comes to eating! Our Wagyu Short Ribs are not only perfect for your BBQ, but also ensure you can put something onto cook and leave it alone, leaving you to enjoy your guests and the rest of your party.
Each pack contains two 1.5kg pieces of Short Ribs, cut with the bone there are 3-4 ribs per piece.
There is something about Short Ribs, dry rub and coffee. We aren't quite sure why but it is just the most fantastic combination ever! Well at least for the time being anyway.
The recipe was tried and tested by our team at a leaving BBQ some time ago. Wagyu Short Ribs were on the menu, the marbling within the muscle simply sublime, enhancing the flavour and texture of this particular cut.
We used a dry coffee rub recipe and let marinade for two days (this could have been done longer if you have the time) and used the brine from the Bison Brisket to wash off the rub. This isn't a necessity but it definitely helped to retain the flavour.
We cooked the Wagyu Short Ribs on the cool side of the BBQ, covered, for 6 hours. Removed them from the foil tray and finished them off uncovered for 30 minutes on a hotter part of the BBQ. Rest and then pull the bones out (didn't take a lot!) sliced them across the grain and served with all the juices poured over the top.

Furthermore, no growth-promoting hormones or animal by-products are used in their feeding program which strictly follows the regimes passed on from cattle feeding masters in Japan.
