Best cooked medium-rare the US Grain Fed Chateaubriand just needs salt, pepper and oil rubbed into it before cooking. Brown the piece of meat on all sides in a smoking hot pan, then place in a preheated oven at 190°C for 10-12 minutes. Remove from the oven and let rest for 10 minutes, cut thick slices and serve. Accompany with a traditional Béarnaise sauce and crushed new potatoes, finished with a handful of rocket for crunch and complementary peppery flavour.
For a delightful accompaniment to a summer spread you can also slice the Chateaubriand wafer thin and serve as a Carpaccio. Lay the slices on a serving platter and drizzle with olive oil, squeeze of lemon juice, shavings of Parmigiano-Reggiano.
