Freedown Hills Olive Fed Wagyu Beef Bresaola 

Our bresaola is a thing of beauty. Finely marbled, the flavours of the meat are intensified by the mouth resting in a dry cure ahead of the three further months of air drying. Sliced thinly it is perfect for snacking on, as the centrepiece of a charcuterie board or as a light but flavoursome starter nestled amidst a fresh green salad. The olive feed gives an almost silky texture to the meat whilst gently enhancing the wonderful umami characteristics. The bresaola is at its best when eaten at room temperature rather than straight from the fridge.
