We like to serve Crocodile Tail Fillets in Baby Gem lettuce as an eye-catching appetiser to pass. It’s quick and easy to mix up a simple Ceviche marinade for the Crocodile Fillet. Just slice a bulb of white fennel, a small white onion and a couple of shallots into a shallow dish, add plenty of salt and sugar, the juice from an orange along with some zest and rind and let it marinade 2-4 hours, or overnight if you prefer. The ceviche marinade will cook the meat, all you have to do is spoon it into the Baby Gem leaves.
