Boned Quail (Caille Crapaudine)
Quail have a taste that is similar, but more flavourful than chicken, with the meat being more delicate and tender. These birds have been butterflied with just the thigh and wing bones remaining so they can be seasoned, fried and ready to eat within a matter of moments. For the more adventurous, they can be stuffed and roasted.
