Guinea Fowl Supreme
Fans of guinea fowl sometimes describe the meat as being like chicken used to be. It is leaner than chicken, having about half the fat, it is darker in colour and has good flavour. Care should be taken not to dry the meat out during cooking (baste the meat or wrap in bacon or parma ham possibly) and you will reap your rewards.
